3lb Corned Beef
Honey & Dijon Mustard Sauce
Whisk together two parts honey to one part mustard
Dijon Dill Butter
Melt one stick of butter and whisk in 3Tlb mustard
& fresh or dried dill to taste
Heat oven to 350 degrees. In a large covered roasting pan place corned beef and enough water to about half way up the piece of meat. Cover tightly and simmer in oven for an hour. Turn meat, cover and cook another hour and a half to two hours, until tender. Drain cooking liquid and turn meat fat side up. Heat broiler. Brush top of the meat with honey mustard and broil for 3 minutes , repeat until you achieve desired glaze. Serve with boiled cabbage wedges, carrots and small red potatoes drizzled with dill butter and additional honey mustard sauce on the side.
