¼ cup Olive Oil
3 to 4 Peppers , seeded and cut
1 Onion , chopped
8 Large Eggs , beaten
Salt & Pepper , to taste
Heat oil in a large skillet, add peppers and onion and cook over medium heat. Stirring until peppers are soft , add salt and pepper to taste.
Add beaten eggs to peppers , stir gently and allow mixture to set. Do not stir too much. When eggs are done spoon between 2 pieces of Italian bread.
