Curried New Potato Salad


2 lb new potatoes, white or red
3/4 cup plain yogurt
1/4 cup mayonnaise
2 tsp curry powder
1 stalk celery, diced
1/3 cup green bell pepper, diced
1/2 cup onion, diced
1 TBSP lemon juice
1 1/2 or to taste, salt, divided


In a large pot of water, place potatoes and 1 tsp salt and bring to a full boil. Reduce heat, but maintain boil for about 20 minutes or until potatoes are just tender. Drain and allow to cool to room temperature. When potatoes are cool, cut into about 1" pieces. In a large bowl, mix all remaining ingredients. Add potatoes and toss gently to completely mix.
