4 large eggs
¾ cup grated Parmesan cheese
2 T olive oil
3 cloves garlic, finely chopped
1 medium onion ,chopped
5 slices bacon , coarsely chopped
1½ cups sliced mushrooms
1 ½ cups frozen peas
½ cup dry white wine
1 pound Spaghetti
Salt & Pepper
Whisk together eggs ,cheese, pepper , a pinch of salt and set aside.
In a large pot of boiling, salted water, cook the spaghetti until al dente.
While pasta cooks, heat oil in a large skillet. Saute garlic and onions til soft and add bacon, peas and mushrooms. When bacon is cooked through add white wine and cook until slightly reduced, about one minute.
Stir in egg and cheese mixture and turn off heat.
When pasta is done, drain and pour egg and cheese mixture over pasta and toss to coat. Season with salt and pepper.
