The McCormick Family Rolled oats Buttermilk Pancakes
This is from Robert W. Pelton’s book Civil War Period Cookery. It is part of a series of historical cookbooks. These books can be ordered from Infinity Publishing at www.infinitypublishing.com I have taken some liberties with this. I did not use a wooden mixing bowl and I did not sift the flour. They are still good.
Ingredients
2 cups rolled oats
2 ½ cups buttermilk
1 ½ cups flour
1 tsp baking powder
1 tsp baking soda
1 TBSP sugar
1 tsp salt
2 TBSP butter, melted
2 TBSP water
1 tsp maple syrup
2 eggs, slightly beaten
Directions
Put the rolled oats and buttermilk in a mixing bowl and let soak 10 minutes. Mix the flour, baking powder, baking soda, sugar and salt. Blend everything together well. Stir in the melted butter, water, maple syrup and beaten eggs. Beat thoroughly. Drop by tablespoonfuls on hot greased griddle. Brown lightly on both sides. Serve while hot with butter and syrup.
