Dirty Rice

Ingredients

  • 1/3 tsp. cayenne pepper
  • 1 tsp. salt
  • 1 tsp. black ground pepper
  • 1 tsp. paprika
  • 1 tsp. dry mustard
  • 1 tsp. ground cumin
  • 1 tsp. whole thyme
  • 1 tsp. leaf oregano
  • 1/2 lb. ground smoked brisket, pork or sausage, or any combination
  • 2 bay leaves
  • 1 cup finely chopped onion
  • 1 cup finely chopped celery
  • 2/3 cup chopped green pepper
  • 2/3 cup chopped red bell pepper
  • 3 Tbsp. chopped garlic
  • 3 1/2 cup hot chicken or pork stock
  • 1 1/3 cup rice

    Directions

    1. Sautee all vegetables and meat in butter or margarine until vegetables are limp.



    2. Add seasonings and sauté an additional two minutes.



    3. Add rice, transfer to oven proof dish and bake at 350° s for 45 minutes or until rice is tender.



    4. Mix and serve.



    This dish has a little kick to it.
