(or substitute for aromatic herb of choice)
Preheat oven to 450. Pell and quarter red potatoes. Lightly cover the roasting pan with: salt, pepper, garlic powder & oregano (or aromatic herb of choice).
Lay potatoes in a single layer over spices. Sprinkle lightly the same spices & herbs over the tops of the potatoes. Drizzle the tops of potatoes with olive oil. Slowl add water down the side of teh pan to cover the ottom about 1/8 of an inch. Roast until golden.
