Maple Links Sweet Potatoes and Apple Delight

Ingredients

4 medium to large sweet potatoes
2 Granny Smith or other tart apples
1 pkg (12 oz) Bob Evans Maple Links (or other maple flavored sausage)
1/2 tsp salt
3/4 cup brown sugar,divided
1/4 tsp nutmeg
1/4 tsp cinnamon
1/4 cup butter or margarine
1 cup apple juice

Directions

Boil unpeeled sweet potatoes 15 min to soften and ease peeling. Cool slightly, Peel and slice about 1/4" thick. Preheat oven to 350. Pan fry Maple Links according to the package directions until brown on all sides. Drain off any drippings, place on paper towels. Cut each sausage link into 3 pieces. Arrange potatoes, apples and sausage alternately in buttered baking dish. Sprinkle with salt,1/2 cup brown sugar, cinnamon and nutmeg .Dot with butter. Pour apple juice over top. Cover and bake 30 minutes. Remove from oven. Sprinkle remaining 1/4 cup brown sugar. Bake, uncovered, 25-30 minutes longer until lightly browned and potatoes are tender. Serves 8. Can refrigerate leftovers.
