Buttermilk Pie


1 cup sugar
1/4 lb butter, melted and cooled
4 TBSP flour
3 eggs
1 cup buttermilk
1 TBSP lemon extract


Mix sugar and flour. Beat in eggs, one at a time, and then beat in butter. Stir the milk in slowly to blend fully. Add the lemon extract. Pour into an unbaked 9" pie shell and bake about 45 minutes in a preheated 350 deg oven. Allow to cool completely before serving.
