Foil Packet Fish Florentine

Ingredients

8 flounder fillets
2 cups Minute Rice
2 cups hot water
1 bag fresh spinach leaves
1/3 cup cream cheese spread w/chives & onions
1/2 cup balsamic vinaigrette salad dressing (or you can substitute another vinaigrette/Italian if you like!)
Seasonings of choice
4 LARGE squares 16x20 HEAVY DUTY foil

Directions

Preheat oven to 375. Mix rice & hot water. Let stand while preparing other ingredients. In small bowl, mix together the salad dressing and cream cheese. Lay out foil pieces. Place equal portions of rice on each piece of foil. Place one piece of fish on top of rice. Top each piece of fish with a handful of spinach, dividing among packets. Place another fillet on top of spinach, and then pour sauce mixture over all. SEASON well. Fold up packets lengthwise, then on the ends, folding tightly. (Don't worry--your spinach won't get "caught"--it's ok to fold up pretty tightly!)

Place on an 11x15 baking sheet. Bake at 375 for 20 minutes. Let stand for

5 minutes. Cut open and serve in the foil packets on a large plate.

(If you want smaller servings--just add another foil packet, and divide equally!)

(Can also be grilled--medium hot grill--turn only once)
