Chicken and Fettuccine Casserole
Ingredients
1/4 cup butter
1/4 cup flour
1 cup milk
1 cup chicken broth
1 large chicken, cooked and boned (Jeanie admits that she uses chicken breasts. I would guess about 3 cups of chicken)
5 oz fettuccine, cooked and drained
2 cups sour cream
1 10 oz pkg frozen spinach, cooked and drained
1 6 oz jar mushrooms, drained
1 8 oz can sliced water chestnuts, drained
1 4 oz jar pimentos, drained
1/2 cup onion, chopped
1/2 cup celery, chopped
1/3 cup lemon juice
2 tsp seasoning salt
1/2 tsp cayenne
1 tsp paprika
1 tsp salt
1 tsp pepper
1 1/2 cups Monterey Jack cheese, grated
Directions
Melt butter and stir in flour. Add milk and chicken broth. Continue stirring and cook until thickened. Add remaining ingredients except cheese. Put into a buttered 9x13" casserole and top with cheese. Bake 25 to 30 minutes @ 300 deg.
