Blackened Catfish

Ingredients

  • Fresh filet of catfish
  • cajun spice (equal parts white, red, and black pepper, thyme, dried parsley, oregano, salt, onion powder, and granulated garlic)
  • sauce (equal parts melted butter, fresh lemon juice, and Worchester)

    Directions

    1. Heat a cast iron skillet over high heat until very hot.



    2. Pat dry the catfish, then dredge in the Cajun spice. Place catfish into hot skillet and cook for 3 minutes.



    3. Turn and cook an additional 3 minutes. Exact cook time depends on thickness of filets.



    4. Serve over dirty rice and ladle sauce over dish. Garnish with lemon.
