Fresh filet of catfish
cajun spice (equal parts white, red, and black pepper, thyme, dried parsley, oregano, salt, onion powder, and granulated garlic)
sauce (equal parts melted butter, fresh lemon juice, and Worchester)
1. Heat a cast iron skillet over high heat until very hot.
2. Pat dry the catfish, then dredge in the Cajun spice. Place catfish into hot skillet and cook for 3 minutes.
3. Turn and cook an additional 3 minutes. Exact cook time depends on thickness of filets.
4. Serve over dirty rice and ladle sauce over dish. Garnish with lemon.
