Crustless Spinach Quiche


1 10 oz pkg frozen chopped spinach
8 oz part-skim mozzarella cheese -- grated
1 1/2 cups egg substitute
4 tsp grated onion
1/4 tsp nutmeg
salt and pepper -- to taste
nonstick vegetable cooking spray


Preheat oven to 350 degrees. Thaw spinach and press out all moisture. Mix spinach with cheese, eggs, onion, nutmeg, salt, and pepper. Transfer to an 8-inch pie plate coated with vegetable spray. Bake 30 minutes or until knife inserted in center comes out clean. Serve hot or cold.
