Low Fat Crispy Chicken


4 to 6 boneless, skinless chicken breast halves
3/4 cup buttermilk
1 egg
1 cup dry bread crumbs (approx. Use more as needed)
2 TBSP cajun seasoning


Beat the egg thoroughly into the buttermilk and pour into a flat dish. Mix seasoning with bread crumbs and spread about half the mixture into a plate. Spray a flat baking dish with cooking oil spray. Dip each piece of chicken in the buttermilk mix and coat lightly with the bread crumb mixture to just coat. Place in the baking dish and continue until all the chicken is coated, adding additional crumbs as needed. Do not crowd the chicken in the dish. Bake in a preheated 425 deg oven about 25 minutes or just until done.
