Sylvia's Kitchen -- Fresh Corn Salad


6 Ears FRESH corn*, husks and silk removed
3 Scallions, thinly sliced on diagonal, white and green parts
Juice of 1 lime (about 1 tablespoon)
2 Tablespoons Extra Virgin Olive Oil
3 Large basil leaves, finely chopped
Salt to taste
Ground black pepper to taste


With a knife, cut the kernels from the ears of corn into a bowl.

Mix corn, scallions, lime juice, olive oil, basil, salt and pepper in a bowl.

Chill for 30 minutes in refrigerator. Remove, stir and serve.

Serves 4 – 6

*Use the freshest, sweetest corn you can find!
