Handy Bran Muffins


1 cup each, all-bran cereal and hot water
1 ½ cups sugar
3/4 cup cooking oil
2 eggs
2 cups buttermilk
2 ½ cups all purpose flour
2 ½ tsp baking soda
1 tsp salt
2 cups raisin bran cereal


Pour hot water over all bran; allow to stand. In large bowl, mix sugar, oil, eggs, and buttermilk. Mix together all dry ingredients. Stir dry ingredients and all bran mixture into milk mixture. Add raisin bran. Fill muffin cups 2/3 full and bake in a 375 deg oven about 20 minutes or until brown.
