Arroz Con Pollo


4 chicken breast
3 tbs. vegetable oil
1 large chopped oinion
1 chopped pablano pepper
1 green bell pepper
1 qt. chicken broth
1 lb. Jazmine rice
1 tbs. ground cumin
*Salt & Pepper to taste


In a large skillet, heat oil and brown the chicken for approximately 5 minutes on each side. Remove chicken. Saute the onion and peppers until onion is translucent. Add rice and stir until rice is near clear. Add the cumin, salt and pepper.
Pour in the broth, add the chicken and lower the temperature. Cover and simmer for 30 minutes stirring every 10 minutes. When rice is fluffy, turn off the heat and serve.
