Lauren Kravet's Uncle J’s Potato Salad
Boil 3 lbs. of Yukon Gold potatoes with the skin still on
Boil 6 extra large eggs in separate pot
Drain potatoes and eggs and let cool
Cut potatoes in one-inch squares
Peel eggs and cut them to your liking
Chop 1 red pepper and 1 yellow pepper
Chop four scallions
Mix all ingredients in large bowl and mix in ½ cup of mayonnaise. Add more to your taste.
Salt and pepper to taste
Can add ¼ cup yellow mustard for zestier taste
Let potato salad sit and cool in fridge if you’d like
And then… ENJOY!
