2 Tablespoons Olive Oil
1 Medium Onion, chopped
8oz Crimini Mushrooms, coarse chop
2 Cups Marsala Wine
1 Package Frozen Artichoke Hearts, Thawed
1 Cup Heavy Cream
1 ½ Cup Grated Parmesan
1 Cup Parsley Chopped
1 lb Pasta
Salt & Pepper
Heat olive oil in a large sauté pan, add onions and salt, sauté till soft about 8 minutes.
Meanwhile bring salted water to a boil for cooking pasta. Cook pasta unitl al dente.
Add mushrooms to onions salt and pepper to taste, cook til soft. Add Marsala wine and artichokes cook through, approximately two minutes stirring gently. Add Grated cheese and cream heat through, add pasta mix well. Top with parsley and serve.
