8 Slices Thick Cut Bacon, cut to 1 inch
1 Small Onion, chopped
3 Large Eggs , whisked
¾ Cup Grated Parmesan
4 oz. White Wine
Fresh Cracked Pepper
Cook pasta in salted boiling water. Sauté bacon pieces and onion in a large sauté pan until onion is soft. Add white wine to deglaze the pan. Stir over medium heat to cook off alcohol.
Whisk eggs and grated cheese together. Gradually add egg and cheese mixture to bacon and onion mixture, tempering eggs.
When pasta is al dente, drain most but not all of the cooking water.
Toss with egg mixture. Top with grated cheese and bread crumbs.
