- 8 oz Salmon Filet
- 1/2 cup Cooking Wine
- 2 oz Pesto
- 1 1/2 cup Heavy Cream
- 1 oz Fresh Spinach
- 1 oz Button Mushrooms
- 1/2 oz Red Pepper Small Diced
You may cook your salmon in the method you choose. I suggest cooking on an outdoor grille. (The salmon aroma tends to linger in the house)
If the weather does not permit outdoor grilling, I suggest cooking in a shallow baking dish with a small amount of wine (about 1/2 cup) in a 350 oven for about 12 min. This will vary depending on how thick your salmon is. The Sauce:
1. In a sauce pan on stove top. Lightly sauce mushrooms. Add heavy cream.
2. Reduce heat and bring to a simmer. Stir cream constantly and reduce by half.
3. Add salmon to pan with sauce or just poor sauce over salmon and spinach.
