1 Medium Onion, chopped
2 Cloves Garlic. chopped
2 Sprigs of Fresh Rosemary, stems removed
2 Cans Chick Peas
Salt & Pepper
Drain and rinse chick peas and set aside. Add a good splash of olive oil to a soup pot . Heat oil , add onion ,garlic and rosemary, stirring, cook until lightly browned. Add chick peas heat through and mash about 1/3 of the chick peas with a fork. Pour water over chick peas to cover. Add salt and pepper to taste.
Simmer for about 15 minutes. Serve with a drizzle of olive oil and grated cheese.
