Zucchini Casserole


4 Medium Zucchini, sliced 1/4" thick
4 Medium tomatoes
4 Medium onions
2 cups shredded mozzarella
2 cups bread crumbs
2 tablespoons olive oil
salt, pepper, garlic powder to taste


Preheat oven to 350 degrees. Coat a large flat baking pan with olive oil.
Layer zucchini on bottom of pan. Salt, pepper and garlic lightly to taste.
Layer tomatoes and season. Top with onion slices, bread crumbs, mozzarella and season. Repeat layers and top generously with cheese.
Bake for 30 minutes
